This is a recipe that my sister-in-law Stephanie Pyne gave me and I love it! You can even make it in the microwave. Try it; you will love this one!
1 8 oz can tomato sauce, divided
1/4 cup brown sugar
1 tsp mustard
2 eggs slightly beaten
1 pkg of onion soup mix
1/4 cup cracker crumbs
2 lbs ground beef
In small bowl, combine tomato sauce, brown sugar, and mustard. Set aside. In large mixing bowl, combine eggs, soup mix, cracker crumbs, and ground beef. Add 1/2 of the tomato mixture and stir thoroughly. Place meat mixture in loaf pan and cook 400 degrees for 45 minutes. Drain grease, then pour remaining tomato mixture over the top and cook for approximately 15 minutes. Cover with tin foil for first 30 minutes then leave uncovered for 15 minutes and the last 15 minutes.
Microwave recipe: Place meat mixture in glass container. Pour remaining tomato mixture over top meat. Cook uncovered on high 12 to 14 minutes Let stand covered 5 to 10 minutes before serving.
