Banana Poppy Seed Muffins



Banana Poppy Seed Muffins

These are a modification of a Better Homes and Gardens recipe that I have. My family ate these right up...they turned out so well!

Ingredients:


1 3/4 cup all-purpose flour

1/2 cup sugar

2 tsp baking powder

1/4 tsp salt

1 T poppy seeds

1/2 cup milk

1/4 cup vegetable oil

1 egg, beaten
3/4 cup mashed banana


Directions:

Grease muffin tin, do not use baking cups with this recipe. Combine dry ingredients flour, sugar, baking powder, salt and poppy seeds together in bowl. Set aside. Combine oil, milk and egg together. Make a well in dry ingredients. Pour milk, oil and egg into dry mixture and stir. Add banana. Stir ingredients together until just moistened. Spoon batter into muffin tin. Bake at 400F for 20 minutes or until golden. Cool on cooling rack for 5 min. Makes 10-12 muffins. Enjoy!

Banana Chocolate Chip Muffins



  • 1 1/2 cups all purpose flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas (about 2 large)
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk
  • 3/4 cup semisweet chocolate chips

Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.

Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.

I got this recipe from epicurious and it turned out ohhhhh, so good. I didn't cook them quite for 32 minutes. I put them in for about 25-27 min. They turned out so delicious!
