Chicken and Broccoli Alfredo



Chicken & Broccoli Alfredo

Serves: 4
Ingredients:
1/2 of a 1-pound package linguine 1 cup fresh or frozen broccoli flowerets 2 tbsp. butter 1 lb. skinless, boneless chicken breast, cut into 1 1/2-inch pieces1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free, 25% Less Sodium or Healthy Request®)1/2 cup milk 1/2 cup grated Parmesan cheese 1/4 tsp. ground black pepper
Directions:
Prepare the linguine according to the package directions in a 3-quart saucepan. Add the broccoli during the last 4 minutes of cooking. Drain the linguine mixture well in a colander.
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until it's well browned, stirring often.
Stir the soup, milk, cheese, black pepper and linguine mixture in the skillet. Cook until the mixture is hot and bubbling, stirring occasionally. Serve with additional Parmesan cheese.
Tip: You can substitute spaghetti or fettuccine for the linguine in this recipe.
Serving Suggestion: Serve with a mixed green salad topped with orange sections, walnut pieces and raspberry vinaigrette. For dessert serve almond biscotti.

I got this from Campbell's kitchen recipes. Their picture looks so much better than mine but it tastes ohhh so good. I know I have been cooking a lot with broccoli lately (much to my children's dismay!) but I had to use up all my broccoli before it went bad!

Cheezy Ham Rotini Bake



I just made this up although I'm sure someone somewhere has made this before. It tasted pretty good though so here is the recipe.
1 package of Rotini noodles
White sauce: 4 T butter
1/4 cup of Bisquick (pancake mix will probably do or even flour)
2 cups of milk
chopped up bits of ham
broccoli (or other vegetable)
cheddar cheese
Cook up the noodles separately--you can do macaroni, egg noodles, I used rotini they were fun.
In another saucepan, melt butter and add Bisquick. Stir together then add milk and stir constantly till bubbly, boiling and thickened. (I also put in a chicken boullion cube for flavor). Then in a 9 x 13 pan combine cooked noodles, ham, broccoli and white sauce. Stir well. Grate cheese over the dish. Above I have a picture before I cooked it and after. Cook in oven about 15-20 minutes till warmed through at 350F. Serve with Fresh Rolls and you have a lovely meal to enjoy!
